As I am sure you will be able to tell from this book's detailed synopsis, Vegan Pasta Night is practically an encyclopedia of delicious Italian cuisine, with each recipe veganised so vegans need no longer have even the tiniest sense of missing out when it comes to their favourite pasta meals. Brianna Claxton covers all the Italian pasta dishes I had ever heard of and adds lots more that were new to me too. Each one is illustrated with gorgeous photography that makes choosing where to start the most difficult thing about this book!
I attempted several of the simpler recipes over the past couple of weeks with a high success level and, although some are perhaps more time consuming than many people could warrant on a day-to-day basis, they make for amazing presentation meals. I attempted several of the simpler recipes over the past couple of weeks with a high success level and, although some are perhaps more time consuming than many people could warrant on a day-to-day basis, they make for amazing presentation meals. Where Vegan Pasta Night wasn't an ideal book for me was in the quantities that a lot of the recipes are designed to make. While I'm sure the resulting creation will be divine, I simply can't justify simmering a sauce for three days when it's just me that will be eating it, for example, and I don't have the space to store many jars. However, for the cook who is feeding a hungry family or who has sufficient larder space, Claxton's recipes for slow sauces and homemade pasta would be perfect.
Personally, I found myself picking out ideas and inspiring flavour combinations, then recreating somewhat simplified versions of those recipes using premade pasta and, on one occasion, gnocchi. However, I love now having authentic tasting recipes for sauces that I hadn't previously attempted to veganise and I am looking forward to creating some of the vegan 'meats' from scratch soon, as well as expanding my repertoire of vegan cheeses (hopefully in time to create a small vegan cheeseboard for Christmas!). Vegan Pasta Night would be a fantastic addition to any serious Italian foodie's kitchen bookshelf and it is also a beautifully aspirational cookbook to own.
