I have a new favourite cookery book and it is Green Levantine Cuisine, a wonderful introduction to the traditional vegan dishes of Middle Eastern and North African cuisine. Like many new vegans I suppose, I first looked towards India for advice and recipes for cooking my own tasty vegan curries, but have since learned that most cultures have vegan gems to share and this Levantine selection is inspirational. I love that the chosen dishes don't require long lists of ingredients or the skills of a Michelin chef. Hader writes in a friendly, chatty style so his book feels welcoming and encouraging. It includes colour photographs and, of the few recipes I've tried so far, most turned out looking fairly similar to the pictures! I managed to find some of the more specialised spices in a Middle Eastern grocery in Chester and sumac particularly has been a revelation. Other than those spices though, practically all the ingredients are basic staples such as lentils and rice which I already had so it was great not to have to splash out in order to experiment. I appreciated seeing authentic recipes for tabbouleh, hummus and falafel - my own previous concoctions having been close, but not quite right - and am looking forward to trying ideas such as Tahini-baked Cauliflower as soon as I can track down some allspice. Hader includes recipes for flatbreads too and the Egyptian favourite, Kushari, which I have seen mentioned in novels and can now sample for myself. This one does look more like a sharing meal than a one-person dinner though so I shall probably inflict my attempt on our next visitors! I almost always enjoy cooking anyway, but every once in a while I find a cookery book that reignites my creative spark. Green Levantine Cuisine has done that so well.
